From the bottler Rest & be Thankful Whisky Company, a 34 year old Carsebridge single grain, distilled in 1981, from cask 73550, bottled at 53.2%, one of 442 bottles. Carsebridge was a Lowland grain distillery at Alloa, closed in 1983 and since demolished. Water came from the Gartmorn Dam, one of the oldest man made reservoirs in Scotland.

The spirit was distilled continuously in two Coffey stills from a grain mash, for the light, sweet grain spirit Carsebridge was known for. Decades in ex-Bourbon oak turned the light grain deep, oily and sweet. Decades have drawn the grain to a tropical, oily delicacy, crème brûlée, coconut and a faint sotolon. The light Lowland grain gains its deep coconut and toffee entirely from the cask. Decades in cask build a waxy, polished depth over the light Carsebridge spirit. Long ageing turns light grain into a deep, oily, dessert sweet whisky. No more will ever be made, the distillery silent since 1983.

At 53.2%, undiluted, it is deep and sweet. Coconut from the oak lactones and vanilla from vanillin run deep, over butterscotch and a soft oil. A butterscotch and a creamy oak lift it. The close is long, dessert sweet over oak. This is an old Lowland single grain of real character.
