This Caol Ila was bottled by the Italian bottler Wilson and Morgan, an 8 year old, at 57.1%. A lighter Islay smoke, all lemon, brine and a peppery oil. The distillery looks out to the Paps of Jura. It is Diageo’s largest Islay distillery by some way. Bottled by independents the world over, and by Diageo itself. This is a polished, maritime Islay single malt.

Description
From the Italian bottler Wilson and Morgan, an 8 year old Caol Ila, distilled in 2015, from cask 314293-97/314299-301, bottled at 57.1%, one of 2383 bottles. Caol Ila is a workhorse of the blending halls and a favourite of malt drinkers. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
This was drawn off a high cut from peated barley, giving a clean, lemony peat. A fresh bourbon barrel lent vanilla, coconut and a fuller body. Young and extractive, the cask sheds vanillin (vanilla) and toasted hemicellulose sugars (a light caramel) fast, the phenols still sharp and medicinal. Active wood frames the smoke without smothering the citrus beneath. Malt comes from the Port Ellen maltings on the south of the island. The peat here is medium rather than heavy, so fruit and smoke share the glass. The six tall stills sit behind picture windows looking out to Jura.
At 57.1% without water it is rich and full. Wood smoke, lemon zest and brine, with vanilla and a honeyed edge from the cask. Soft smoke and citrus sit behind the cask. Ash, lemon and brine draw out the close. This is a clean Islay smoke from the island's largest distillery.
