Caol Ila is the largest distillery on Islay. Bottled by independents the world over, and by Diageo itself. This is the smoky workhorse of Johnnie Walker in single malt form.

Description
The bottler Wemyss Malts released this Caol Ila, a 36 year old, distilled in 1981, bottled at 46%, one of 274 bottles. Caol Ila has been bottled at every age from young and fierce to old and waxy. A few weeks each year the distillery runs an unpeated, Highland style spirit.
The spirit was made from medium peated malt for a clean, smoky spirit, shaping the lighter side of Islay. An ex-Bourbon barrel shaped it, vanilla and a light sweetness under the smoke. In its ethereal years the malt is waxy and oxidative, faded esters and a touch of sotolon (maple, spice) over the merest whisper of peat. Maturation by the sea gives the malt its mineral, sea spray character. Water falls to the distillery from Loch nam Ban in the hills above. The lighter style means the cask and the citrus speak alongside the peat. Tall stills and a clean cut give the spirit its oily, lemony lightness.
Reduced to 46%, it is mellow. A clean maritime smoke with lemon and brine, with honeyed oak underneath. The oily body carries the smoke long and clean. A long, briny finish ends on lemon and soft smoke. This is an elegant Islay single malt.
