This Caol Ila was bottled by the Italian bottler Wilson and Morgan, a 10 year old, at 59.9%. Clean and coastal, the smoke leans to lemon and olive oil. It is Diageo’s largest Islay distillery by some way. The spirit is matured largely on the mainland. Water comes from Loch nam Ban, above the distillery. This is a polished, maritime Islay single malt.

From the Italian bottler Wilson and Morgan, a 10 year old Caol Ila, distilled in 2013, from cask 307550 + 307551, bottled at 59.9%, one of 536 bottles. Caol Ila wears its Islay smoke more lightly than its southern neighbours. Most of its peated malt is destined for the Johnnie Walker blends.
Distilled with a long fermentation and a clean cut, for a smoke more elegant than heavy. Ex-Bourbon casks held it, the gentle American oak letting the make lead. Through the integration phase spirit and wood marry, vanillin settling into a rounded vanilla as the guaiacol phenols mellow into a softer smoke. The oily texture comes from the spirit cut, the cask adding depth around it. The medium peating leaves a smoke that is firm but never heavy. Smoked citrus and a saline minerality are the hallmarks of the make. The cool Islay air gives a slow, steady maturation by the shore.
At 59.9%, undiluted, it is bold and clean. Peat smoke, citrus and a soft oil, with a touch of vanilla and toffee. The texture is oily, the smoke threaded with citrus. The finish runs oily, smoky and clean. This is a clean coastal malt with a lemony peat.
