    Signatory Vintage bottled this Cameronbridge single grain, a 36 year old single grain distilled in 1984, from cask 19308 and bottled at 48.9%. Only 193 bottles were released. Founded in 1824 by John Haig, Cameronbridge is the oldest and largest grain distillery in Scotland. Water comes from Loch Leven, the mash from wheat, the spirit drawn off three column stills.

    It was drawn from continuous Coffey stills for a light grain spirit, for a delicate spirit that leans on the cask with age. A refill American oak cask held it, building the sweet, oily grain character. Long ageing brings a deep coconut, toffee and a mellow, polished oak. Long ageing turns light grain into a deep, oily, dessert sweet whisky. The Haig distilling dynasty traces its roots in Scottish whisky back to the 1600s. The distillery sits at Windygates in the Kingdom of Fife, near the River Leven. Light grain spirit like this gains coconut and toffee from decades in active oak.

    Undiluted at 48.9%, it is layered. The ex-Bourbon gives butterscotch, coconut and cream. The mouthfeel is oily, the coconut carried on a sweet body. A long, oily finish carries a coconut lift. This is the grain behind Cameron Brig and Haig Club.
