Description
Caballito Cerrero is made in Amatitan, Jalisco, by the Jimenez family, who descend from the Herradura dynasty and have run their distillery since 1968. This red label Azul bottling is built from 100% Blue Weber agave, the classic tequila plant, yet it is labelled an agave spirit rather than tequila because the producer chooses to work outside some of the regulator's labelling rules, bottled at 46%.
It is classically produced and double distilled, rested forty five to sixty days in stainless steel, then aged nine months in used bourbon whiskey barrels to a reposado profile. The nose offers agave, fruit, minerality, earth, cinnamon and herbs, while the palate moves through cooked agave, herbs, pepper, citrus, mint, dried fruit, oak and a light anise note, the bourbon oak adding sweetness without burying the agave.
