Description
The Cooper's Choice Golden Cut is The Vintage Malt Whisky Co's premium single-cask line, sitting above the standard Cooper's Choice range. The series brief is straightforward: pull individual casks where the wood has done something interesting and bottle them at 50% without chill filtration. This Bunnahabhain comes from cask 0075 and gathers around 300 bottles. The H1 'Honeyed Smoke & Spice' is the bottler's tasting shorthand, not a cask code. The maturation is split in two distinct stages. Spirit spent its long primary maturation in American oak ex-bourbon, picking up the vanilla, coconut and toasted-corn lactones that come out of toasted American white oak. The finish is in a Malaga wine cask, a fortified sweet wine from Andalusia made predominantly from Pedro Ximénez and Moscatel grapes, aged oxidatively in solera. Malaga shares some of Pedro Ximénez's raisin and dried-fig depth but carries a darker, more treacle-like sweetness from the arrope reduction process used in production. The wine residue in the staves transfers all of that into the spirit during the finish. The result, as the bottler's own name suggests, leans into honeyed peat smoke against fortified-wine richness. Old leather, dried fruit and a weighty winey sweetness sit on top of the campfire smoke from the heavily peated Bunnahabhain spirit, with the bourbon-cask vanilla giving the midpalate something sweeter to land on before the wine spice takes over. Natural colour, non-chill-filtered, single cask.
