Barbancourt works from fresh-pressed sugar-cane juice, agricole in spirit even though the legal term is reserved for the French islands, and double distils for a refined house style. After twelve years in ex-bourbon casks the profile typically pairs a grassy cane core with vanilla, baking spice, cocoa and gentle oak, drier and more structured than sweet molasses rum.
