The Winter Solstice counterpart to Boann's summer bottlings, drawn from a single Oloroso hogshead, cask 2379, and released in 2023 for the Irish market as 449 half litre bottles. It is just 3 Years Old, distilled in Drogheda, Co. Meath from one of the distillery's revived vintage mash bills of malted and unmalted barley.
Youth here is the point. The heritage mash gives a peppery, gingery spirit with a creamy, oily texture, and the active Oloroso hogshead moves fast, folding raisin, clove and walnut around it in three winters. Bottled at its full 59.91% strength, it is punchy and direct, barley sugar and dark fruit up front, drying oak and a warm spice fade behind.
