Description
The sherry chapter of Boann's core single pot still range, this 2024 European release moved from Ex-Bourbon American oak into Oloroso and Pedro Ximenez casks, the two styles layered for depth rather than raw sweetness. The spirit is Boann's own, triple distilled in Drogheda, Co. Meath from a mash of malted and unmalted barley, and it was bottled at 47%.
Pedro Ximenez brings fig, date and chocolate, Oloroso the drier walnut and old wood frame, and together they sit comfortably on the malt extract sweetness and nutty grip of the young spirit. Pot still spice keeps the sherry from turning sticky, ginger and black pepper cutting through, and the finish is long, raisined and gently drying.
