Description
Palo Cortado is the sherry trade's happy accident, a wine that starts under flor like a Fino and finishes oxidative like an Oloroso, and casks that held it in solera are scarce. Boann Distillery in Drogheda, Co. Meath secured a parcel for this event release, filling them with its single pot still spirit and bottling just 200 examples at cask strength.
The result carries the wine's split personality, walnut, salted caramel and a savoury rancio depth on one side, a fresh, saline lift on the other, both wrapped around the peppery, gingery core that malted and unmalted barley give the house spirit. At 57.5% it is intense but composed, finishing on orange oil, roasted nut and gently drying oak.
