Celtic Whiskey Shop in Dublin picked this Boann single pot still whiskey for the Irish market, a 2025 bottling of 222 at 50%. The spirit, triple distilled in Drogheda, Co. Meath from a mash of malted and unmalted barley, was matured in casks that held Palo Cortado, the rarest of the classic sherry styles, in solera.
Palo Cortado wood gives a distinctive double character, nutty and oxidative yet fresh, and here it layers walnut, orange oil and a saline edge over the green apple, ginger and black pepper of the young pot still spirit. Bottled at cask strength, it keeps a creamy texture through the middle and finishes dry, with hazelnut and barley sugar.
