Boann Distillery in Drogheda, Co. Meath has leaned harder into sherry than almost any young Irish distillery, seasoning and sourcing casks directly from Jerez. For this event release of 200 bottles, its single pot still spirit was matured in casks drawn from a working Amontillado solera, wood that spent years feeding one of the sherry world's nuttiest, most savoury styles.
That upbringing shows. Hazelnut, dried apricot and a saline, bone dry sherry depth fold into the green apple and black pepper of the pot still spirit, with barley sugar and a waxy texture underneath. Bottled at a cask strength of 54.1%, it finishes long and savoury, walnut skin, ginger and a salted caramel fade.
