Description
Boann Distillery began distilling in Drogheda, Co. Meath in 2019, and this 2020 vintage is its own spirit through and through, a single pot still whiskey from a mash of malted and unmalted barley matured for five years in one cask. That cask, number 628, was a third fill Oloroso sherry hogshead from the Vasyma cooperage in Jerez, and the whiskey was bottled in 2025 as an event release of 294 bottles.
Third fill wood gives quietly, so the spirit leads here, green apple, pear and barley sugar with the black pepper and ginger prickle of the pot still style, an oily, waxy texture underneath. The sherry seasoning drifts in later as hazelnut and a faint raisin sweetness. At 61.8%, its natural cask strength, it rewards patience and a few drops of water.
