Boann Distillery in Drogheda, Co. Meath, built by the Cooney family in 2019, has made a project of reviving heritage mash bills from old Irish distilling records. This 2020 vintage single pot still whiskey comes from one of those recipes, malted and unmalted barley run through the distillery's small copper pots, then matured for five years in a single Oloroso sherry cask, number 2337, and bottled in 2025 for the Irish market.

The sherry wood folds raisin, walnut and dark toffee around the peppery, gingery spine that unmalted barley gives the spirit, while a grassy thread of fresh hay still shows through underneath. Bottled at its full cask strength of 60.6% in a run of 246 bottles, it is a broad shouldered young pour, clove and black pepper up front, barley sugar and drying oak behind.
