Description
AI Galli works in north-east Italy, where Ribolla Gialla is a long-established local white grape. This sparkling version is made by the tank method, with the second fermentation in pressurised stainless steel to keep the wine fresh and its aromatics primary. Ribolla Gialla gives high natural acidity and a citrus, orchard-fruit character, and the dry Brut dosage keeps that crispness intact. Bottled young, it is built for freshness rather than long ageing.
The colour is pale straw with a fine, energetic bead. The nose leads on green apple, lemon and pear, with white flowers and a hint of white peach, while the palate is dry, taut and lightly saline with a clean finish. Serve well chilled at around 6 to 8 degrees in a white wine glass, as an aperitif or alongside grilled white fish, shellfish and fresh salads.
