    An official Glen Moray, an 8 year old, 2015, at 59.8%. Light and fruity, with apple, vanilla and a soft honey, with red berry and a dry spice from the cask. Glen Moray is a Speyside malt from Elgin, founded in 1897 in a former brewery. A pioneer of wine cask finishing, working with Chardonnay casks in the 1990s.     This official Glen Moray, an 8 year old, from 2015, at 59.8%. Glen Moray is a fresh, fruity Speyside malt from the town of Elgin in Moray. Its light, fresh spirit suits a wide range of cask finishes, from sherry to rum.

    Worked through the stills for a light, sweet make, for a clean make of orchard fruit and a soft honey. Maturation finished in a Red Wine cask, layered over the light Glen Moray make. Young and extractive, the cask sheds vanillin (vanilla) and toasted sugars (light caramel) over the clean, fruity spirit. A gentle maturation suits the light make, the orchard fruit growing richer with time. Long ageing turns the fresh apple towards dried fruit, honey and a soft spice. Maturation in the bonded warehouses at Elgin is slow and steady. It was built on Gallow Hill at Elgin, the old site of the town's hangings. Most of its malt matures first in American oak ex-Bourbon before any cask finish.

    At 59.8%, undiluted, it is deep and fruity. Green apple, honey and a gentle oak, with red berry and a dry spice from the cask. Pear, honey and a creamy toffee fill the middle. Apple, pear and a soft oak see out the finish. This is an approachable Speyside single malt from Elgin.
