Sandra Wimmeler and Denis Lonnendonker built Windspiel around an unusual idea: a gin distilled not from grain but from potatoes grown in Germany's Eifel uplands, with everything from cultivation to bottling handled on site and the shipping carried out carbon-neutral. For this expression they take their premium dry gin and refine it with sloe juice, the dark wild plums gathered from the surrounding region and pressed to a deep, ruby concentrate.
The nose is intense and layered, juniper and citrus giving way to ripe sloes and a soft floral lift. On the palate it turns silky and full, fresh fruit balanced against a whisper of bitter almond, the whole thing staying bright rather than syrupy. The finish is long and harmonious. Pour it over plenty of ice with a splash of soda and a wedge of lemon for an easy late-summer long drink.
