Scavi & Ray Spumante Ice Prestige

Scavi & Ray finishes its Ice Prestige with a deliberately reduced carbon dioxide content, which gives a gentle carbonation and a lower bottle pressure suited to serving over ice. This Italian Spumante blends sixty percent Glera with forty percent Verduzzo, both picked at optimum ripeness. It is made in a tank based style that keeps the fruit fresh and the mousse fine, preserving primary aromatics rather than building bready depth.

The colour is a bright straw yellow with a gentle perlage. The nose carries an exotic fruit fragrance alongside pear, apple and citrus. On the palate it is fresh and fruity, light and easy, the soft fizz carrying the fruit to a clean finish. Serve well chilled at 8 to 10 degrees, and on hot days add two or three ice cubes in a large glass for extra refreshment. It makes a relaxed aperitif and suits green salads, light fish and fruity desserts.
