Description
Scavi & Ray makes this rosé Prosecco within the DOC that now allows a pink style, blending eighty eight percent Glera with twelve percent Pinot Noir picked at optimum ripeness. As with the house white, it carries a soft, low pressure fizz. The wine is made in a tank based method that keeps the fruit fresh and the mousse fine, with the Pinot Noir lending both colour and a red fruit edge over the Glera base. The finish is dry in a Brut style.
The colour is a light rosé with delicate violet reflections. The nose is finely fruity, with citrus, ripe pear and green apple joined by raspberry and pomegranate. On the palate it is juicy and fresh, flavours of pear, apple and citrus set against a well integrated acidity and a floral edge, with a long finish. Serve well chilled at 8 to 10 degrees, and on warm days a couple of ice cubes suit its easy style. It makes a bright aperitif and suits salads, poultry and light fish.
