Description
Scavi & Ray is a Veneto sparkling label built on the Moscato grape, and this frizzante keeps the pressure deliberately low so a simple cork closure holds the fizz. Fermentation runs in stainless steel to protect the grape's floral character, and the wine stays young and unaged to keep its primary fruit intact. The style sits on the sweeter side, with a fine, easy bead rather than the firm mousse of a fully sparkling wine.
The colour is light straw with a lively, delicate perlage. The nose leads with white peach, apricot and muscat grape over a hint of citrus blossom, and the palate stays soft and fruity, with gentle residual sugar balanced by a fresh acidity. The finish is light and fragrant. Serve well chilled at 5 to 7 degrees in a tulip glass, as an aperitif or alongside fruit puddings, sorbet and fresh strawberries with mascarpone.
