Description
Scavi and Ray is an Italian sparkling wine brand known for a softer, finer bead that comes from a deliberately lower carbon dioxide content and bottle pressure. This Prosecco Spumante is made only from Glera, the classic Prosecco grape, picked at optimum ripeness. It is a tank-method wine, with fermentation kept cool in stainless steel to preserve the fresh fruit and floral aromatics rather than build autolytic depth. The Extra Dry dosage leaves a touch more roundness than a Brut, which reads as gentle fruitiness rather than obvious sweetness.
The colour is light straw with a fine, soft perlage. The nose is fresh and delicately fragrant, with green apple, pear and white peach lifted by white flowers and a hint of elderflower. The palate is light and fruity with a fine tingle and a clean, easy finish. Serve well chilled at 8 to 10 degrees. It works as an aperitif and alongside light starters, fresh salads and simple fish dishes.
