Description
Scavi & Ray built the Ice Prestige around a lower pressure, softer style of Italian spumante, which is why the lower bottle pressure needs only a simple cork rather than a wired cage. The blend is roughly 60 percent white Glera with 40 percent Verduzzo, the latter adding a little more body and orchard fruit to the crisp Glera base, with only the higher quality lots bottled under the house seal. Fermentation is carried out in stainless steel tanks by the Charmat method, keeping the fruit fresh and the mousse fine rather than aggressive.
The wine is pale and bright with a soft bead. Exotic fruit and white peach sit alongside pear, apple and lemon, with a light floral note, and the palate is fresh and gently off-dry in an extra dry style. Serve chilled at 8 to 10 degrees, or with two or three ice cubes on a warm day as the house suggests. It is an easy aperitif and pairs with salads, white fish and lighter shellfish, the small bottle making it a tidy single serve.
