Description
Piper-Heidsieck was founded in Reims in 1785, and Rose Sauvage is its deliberately vivid rose cuvee, presented here in a gift box. It is built from the classic Champagne trio of Pinot Noir, Pinot Meunier and Chardonnay, with a generous share of red fruit giving the wine its deep colour and bold berry character. The wine follows the traditional method, with a second fermentation in bottle and ageing on the lees, which lends a fine bead and a light bready depth beneath the fruit.
The colour is a vivid rose with a lively bead. The nose is intensely red-fruited, with strawberry, raspberry, redcurrant and cherry over a citrus edge, and the palate is fresh and structured, carrying that fruit on a fine mousse with a light biscuit edge, closing clean and long. Serve at 8 to 10 degrees in a white wine glass. It makes a striking aperitif and suits duck, poultry, oily fish such as salmon and red-berry puddings, with the box making it an easy present.
