Piper-Heidsieck blends this Reims brut from Pinot Noir, Pinot Meunier and Chardonnay, the Riviera edition a lively, fruit forward take on the house style aimed at the aperitif hour and warmer settings. It is made by the traditional method, the second fermentation carried out in the sealed bottle, after which the wine ages on its fine lees so the yeast contact adds a gentle bready, praline note over the fruit. Reserve wines from earlier years round out the blend for consistency, and the dosage is set at a brut level, keeping the wine dry and balanced.
The colour is bright pale gold with a fine, steady mousse. Aromas run to pear, apple and white peach with a twist of citrus peel, backed by toasted bread and a light biscuit and praline depth. The palate is fresh and generous, ripe orchard fruit set against clean acidity and a soft, fine bead, finishing dry. Serve well chilled at 7 to 9 degrees in a tulip glass, ideally with something to eat. It works as an aperitif and suits shellfish, white fish and lighter poultry.
