Paladin works in the Veneto, and this Raboso Fiore is a sparkling red made from the region's native Raboso grape. The wine is produced by the Charmat, or tank, method, where the second fermentation takes place in a pressurised stainless steel tank rather than in bottle. That approach keeps the fruit primary and the bead soft, and it suits a variety like Raboso whose dark skins bring firm tannins and deep colour. A gentle residual sweetness in the Demi-Sec range balances that natural grip and tartness, giving a red fizz that stays lively and approachable.
The colour is an intense ruby red with violet reflections and a fine, persistent bead. The nose shows ripe cherry, wild berries and blackberry, with a floral hint of violet and rose, plus a touch of spice. The palate is soft and lively, its light sweetness set against fruit acidity and a subtly tannic structure, closing fresh and juicy. Serve well chilled at 6 to 8 degrees in a wine glass. It suits antipasti and cured ham, grilled pork or chicken, and hard aged cheese.
