Description
Paladin makes this Amico Filo as an uncomplicated white frizzante in the Veneto. The grapes are fermented at controlled temperature in stainless steel to hold on to their natural freshness and primary fruit, and a light second fermentation gives the wine its soft, semi-sparkling bead rather than the fuller pressure of a full spumante. At 11 per cent it sits deliberately light and moderate, built for easy drinking rather than complexity, and finished dry enough to open a meal.
The wine is pale straw with a fine, lively perlage. The nose is fresh and direct, with lemon and green apple over a delicate floral note and a touch of citrus peel. The palate is light and refreshing, cleanly structured with bright acidity and a clean, balanced close. Serve well chilled at 6 to 8 degrees in a white wine glass. It works as a summer aperitif and alongside antipasti, light salads, grilled white fish, prawns and calamari.
