Description
Paladin makes this Prosecco DOC in the Veneto from Glera, and the name Tondo points to its rounded, smooth character. Second fermentation runs by the Charmat method at a controlled 13 degrees, a tank-based process that preserves the primary fruit and gives a soft, fine bead. Around ten per cent unfermented Glera juice is added before the second fermentation, followed by roughly forty days on the lees, which adds a little extra texture and finesse. With residual sugar near 21 grams per litre, it falls in the Dry category, so it is noticeably softer and more harmonious than a Brut.
The colour is a pale straw yellow with a fine, elegant bead. The nose shows wild apple and white blossom, with a floral, honeysuckle tone. The palate is soft and balanced, its light sweetness set against lively freshness and a clean, lingering finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It makes a classic aperitif and pairs with antipasti, light starters, seafood and summer salads.
