Description
Paladin makes this Prosecco in the heart of the Veneto as a Millesimato, drawn from a single year, the 2024 harvest, using Glera grapes from within the DOC zone. Second fermentation takes place in stainless steel tanks by the Charmat method, a tank-based process that keeps the primary fruit and floral character intact while producing a fine, persistent bead. The Extra Dry style carries a touch more residual sugar than a Brut, which softens the wine and makes it more approachable without tipping into sweetness. Moderate in alcohol, it is built for easy drinking.
The colour is a bright straw yellow with green reflections and a lively perlage. The nose shows green apple, pear and white flowers, with a hint of citrus. The palate is fresh and fruity, with a subtle, well-integrated sweetness and a lightly mineral finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It makes a versatile aperitif and pairs with light starters and antipasti, fresh salads, seafood or delicate white fish.
