Paladin’s millesimato Prosecco is a single-vintage Glera made in the extra dry style. Tank fermentation keeps the pear and white-flower fruit fresh, the perlage fine and the finish softly fruity.

Description
Paladin makes this millesimato from the Prosecco DOC zone of north eastern Italy, using the native Glera grape. It is made by the Charmat method, where the second fermentation runs in pressurised stainless steel tanks under controlled temperature rather than in bottle. Keeping the wine in tank and off oak protects Glera's fresh, floral aromatics, and being a millesimato it comes from a single vintage for a consistent style. The extra dry dosage leaves a little more roundness than a brut while the wine stays clearly fresh and lively.
The colour is pale straw with green tints and a fine, steady bead. The nose shows green apple, pear and white peach over white flowers, with a squeeze of lemon and a honeysuckle note. The palate is light and animated, the gentle fruity sweetness of the extra dry style balanced by clean acidity and a soft mousse, finishing crisp. Serve well chilled at 6 to 8 degrees in a white wine glass or flute. It makes an easy aperitif and suits light salads, white fish and delicate shellfish.
