Description
Casa Paladin is a Veneto winery, and this Prosecco Millesimato uses Glera from the hilly zone between Conegliano and Valdobbiadene, a long-established Prosecco area with viticulture recorded here since Roman times. It is a single-vintage bottling made by the tank method, with a controlled fermentation temperature of around 16 degrees that produces a fine, gentle bead and preserves the delicate fruit and floral aromatics rather than building autolytic weight. The Extra Dry dosage gives a soft, accessible fruitiness that keeps the wine easy to drink across a table.
The colour is straw yellow with a fine perlage. The nose is floral and fruity, with pear, apple and white peach over white flowers and a hint of honeysuckle. The palate is smooth and elegant, with a soft mousse and a long, persistent finish. Serve well chilled at around 5 to 9 degrees. It works as an aperitif and to open a meal, and pairs with fish starters, seafood risotto and light salads.
