Description
Casa Paladin is an established Veneto producer, and its Essenthia Prosecco is built entirely from organically grown Glera. The wine follows the tank method, with a second fermentation in pressurised vessels that keeps the fruit primary and the bead fine. This approach preserves the grape's fresh apple and floral character rather than layering on autolytic complexity, which suits the easygoing style of a Prosecco DOC. The Extra Dry dosage leaves a touch more roundness than a Brut, giving the wine a soft, approachable feel.
In the glass it shows pale straw yellow with a lively perlage. The nose is fruity, with white fruits and ripe apple to the fore and a floral edge behind. The palate is refined and juicy, carrying ripe orchard fruit through a long, clean finish. Serve chilled at 8 to 10 degrees in a tulip glass or flute. It is a natural aperitif and pairs well with light salads, white fish and shellfish.
