Description
Imperial Brut is the flagship of Moët & Chandon and reflects the breadth of the Champagne region, blending many terroirs, grapes and vintages into a single consistent style. Around a fifth to a third of the assembly is reserve wine, which adds maturity and keeps the character steady from year to year, and the mix runs to Pinot Noir for structure, Pinot Meunier for suppleness and Chardonnay for finesse. The wine is made by the traditional method with its second fermentation in bottle and time on the lees, the source of its fine perlage and gentle toasted depth. The 1.5 litre magnum favours slow, even maturation, and the dosage is a brut 7 g/l.
The colour is golden straw with green reflections and a lively, fine bead. The nose shows green apple and citrus with mineral hints, white flowers and a brioche and nutty edge. The palate is lively and balanced, with pear, peach and apple, fresh citrus and a long, even finish. Serve at 6 to 8 degrees in a tulip glass. It works as an aperitif and alongside oysters, prawns and fish dishes, and suits lighter starters such as carpaccio or a mild cheese.
