Description
Moët & Chandon is one of the founding houses of Champagne, and ICE Imperial is its answer to warm-weather drinking, the first Champagne conceived to be served over ice. The blend follows the house grapes of Pinot Noir, Pinot Meunier and Chardonnay, with a generous proportion of ripe reserve wines built into the cuvee. It goes through the traditional second fermentation in bottle and rests on its lees, then takes a raised demi-sec dosage of around 45 grams per litre so the fruit stays intense once the ice dilutes it slightly in the glass.
The colour is a bright golden yellow with a lively bead. The nose is tropical and generous, with mango, candied orange, peach and a touch of vanilla. On the palate it is full and soft, its sweetness balanced by gentle acidity, closing long on exotic fruit and a fine citrus edge. Serve it well chilled at 6 to 8 degrees, ideally over ice in a large glass with mint or lime zest. It suits fruit desserts, citrus patisserie and sweeter Asian dishes.
