Description
Moët & Chandon has been based in Épernay since 1743 and Brut Impérial is its house signature, blended from Pinot Noir, Pinot Meunier and Chardonnay grown across a wide spread of Champagne vineyards. The wine is made by the traditional method, with a second fermentation in bottle and ageing on the lees that gives the cuvée its bready, nutty layer. Reserve wines from earlier harvests are blended in to hold the recognisable Moët style steady from year to year, and the low dosage keeps the wine firmly in Brut territory. This three litre Jeroboam in a wooden case is built for a celebration on a larger scale.
The wine pours a light golden yellow with a green shimmer and an even, fine bead. The nose carries green apple, pear and roasted cashew with a touch of vanilla. On the palate it is sparkling and fresh, showing white peach, apple and citrus, rounded by a biscuity depth into a full, long finish. Serve at 8 to 10 degrees. It opens well as an aperitif and pairs with seafood starters, lightly sauced fish and poultry.
