Description
Moët & Chandon has bottled Imperial Brut in this style since 1869, and it remains the largest house's calling card. The blend brings together more than a hundred base wines, with roughly a quarter held back as reserve wines for consistency across harvests, and it is built from Pinot Noir for structure, Pinot Meunier for suppleness and Chardonnay for finesse. Made by the traditional method, the wine takes its second fermentation in bottle and rests on the lees, which lends the creamy texture and the light toasted character. The magnum format slows maturation and suits a festive table, and the dosage sits at a brut 7 g/l.
The wine shows a golden straw colour with green reflections and a fine, creamy bead. Green apple, citrus and white flowers lead the nose, backed by brioche, cereal and fresh nut. The palate runs to pear, peach and apple with a lively citrus edge and a balanced, long finish. Serve at 8 to 10 degrees in a tulip glass. It is an easy aperitif and pairs with oysters, scallops and light fish, and holds up to poultry and Mediterranean starters.
