Description
Moët & Chandon has been based in Épernay since 1743 and Impérial Brut is its house style, a blend of Pinot Noir, Pinot Meunier and Chardonnay sourced from a wide spread of Champagne villages. The wine is made by the traditional method, with a second fermentation in bottle followed by extended ageing on the lees, the autolysis that builds Champagne's bready, savoury complexity. A low Brut dosage of around 7 grams keeps the finish dry and lets the fruit and structure lead.
The colour is a clear golden yellow with a green shimmer and a steady, fine bead. The nose shows green apple, roasted nuts and a hint of vanilla, and the palate carries white peach, pear and apple with a citrus edge and a full, long finish. Serve at 8 to 10 degrees in a white wine glass or flute. It is a classic aperitif and pairs with seafood starters, lightly sauced fish and hard, nutty cheese.
