Description
Ice Imperial was the first Champagne from Moët & Chandon designed to be served over ice, and it carries a higher dosage than the house's brut so the sweetness survives dilution. It is made from the classic trio of Pinot Noir, Pinot Meunier and Chardonnay by the traditional method, taking its second fermentation in bottle and resting on the lees before release. At 45 g/l residual sugar it sits in the demi-sec band, and the format here is a 1.5 litre magnum suited to summer entertaining and the poolside.
The wine is gold with amber accents in the glass. The nose leads with tropical fruit, nectarine and a touch of raspberry, while the palate turns to ripe fruit and sweet caramel with a ginger and citrus edge that keeps it fresh. Pour it into a large wine glass over ice, then add lime, grapefruit, cucumber or mint. Served this way it is an aperitif and a warm-weather refresher rather than a table wine, and it suits fruit desserts and lightly spiced dishes.
