Description
Moët & Chandon created Ice Impérial as the first Champagne designed to be poured over ice, the work of former cellar master Benoît Gouez. The blend is led by Pinot Noir at 40 to 50 percent for structure and fruit, with Pinot Meunier for body and Chardonnay for freshness, rounded by reserve wines. Made by the traditional method with ageing on the lees, it carries a Demi-Sec dosage of 45 g/l, deliberately high so the sweetness and body hold up once ice dilutes the glass. This three litre Jeroboam in a wooden case is made to anchor a summer party.
The wine shows an intense gold with amber highlights and a lively bead. The nose leans exotic, with mango, apricot and stone fruit over a hint of red berries. The palate is generous and full-bodied, showing fruit salad, quince and caramel with a touch of grapefruit and ginger into a smooth, long finish. Serve over ice at around 6 degrees in a large wine glass, dressed with fresh berries, mint, cucumber or a twist of lime. It suits fruit desserts, pastries and lightly spiced dishes.
