Description

This STR Cask Matured Edition 2019 is a 7 year old from 2012, matured in STR casks, red wine barrels that have been shaved, toasted and re-charred to rework the wood. A wider release of 14,500 bottles. Kilchoman, founded by Anthony Wills in 2005, was the first new distillery on Islay in over 124 years.

The distillery malts its own barley and bottles on the farm, a barley to bottle approach. Matured in STR casks, the reworked wine wood gives a spicy, fruity character.

Bottled at 50%. The STR wood gives dark fruit and a toasted spice while peat phenols carry the smoke. The recorded notes run to smoke, dried fruit, a mossy earthiness, vanilla, a cooked malt note and honey. An STR-matured farm malt.
