Kilchoman Single Cask Release 5 Years Old 2011

This Single Cask Release is a 5 year old from 2011 matured in Oloroso, cask 556. An outturn of 341 bottles for Italy. Kilchoman, founded by Anthony Wills in 2005, is the island's only farm distillery.

Every stage from malting to bottling happens at Rockside Farm. Matured in a single Oloroso cask, the sherry wood pulls the young peated spirit towards dark fruit.

Bottled at its natural cask strength of 58.6%. The Oloroso gives dried fruit, melanoidins reading as fig and raisin, while peat phenols carry the smoke. The recorded notes run to cooked fruit, dried fruit, a sherried character and tobacco. A young sherried single cask for Italy.
