Description
Sanaig is Kilchoman's sherry-led core expression, named for a coastal inlet near the distillery, here with the Oloroso leading the ex-Bourbon. Founded by Anthony Wills in 2005 at Rockside Farm, Kilchoman is the only farm distillery on Islay.
Malting, distilling and bottling all happen on the farm, the barley to bottle way. Matured in Oloroso and ex-Bourbon casks, the sherry wood pulls the young peated spirit towards dark fruit.
Bottled at 46%, non-chill-filtered and natural in colour. The Oloroso gives dried fruit, melanoidins reading as fig and raisin, while peat phenols carry the smoke. Richer and darker than Machir Bay, the sherried face of the core range.
