Description
This Cask Strength Sanaig takes Kilchoman's sherry-led core expression and bottles it undiluted from ex-Bourbon and Oloroso casks. Kilchoman, founded by Anthony Wills in 2005, is Islay's only farm distillery.
The distillery malts its own barley and bottles on site. Matured in ex-Bourbon and Oloroso casks with the sherry to the fore and bottled at full strength, the wood pulls the young peated spirit towards dried fruit.
Bottled at its natural cask strength of 57.8%. The Oloroso gives fig and raisin from its melanoidins while peat phenols carry the smoke. The recorded notes run to chocolate, smoke, a sherried character, honey, an oily texture and fresh oak. The richer core expression at full power.
