Kilchoman Genesis Peating Stage 3

Genesis is a Kilchoman series tracing the steps of whisky making, and this is Stage 3, Peating, matured in ex-Bourbon and Oloroso casks. An outturn of 3,600 bottles. Set up by Anthony Wills in 2005, Kilchoman remains Islay's only farm distillery.

The distillery malts its own barley and bottles on the farm, the barley to bottle process the Genesis series celebrates. Matured in ex-Bourbon and Oloroso casks, the two woods give vanilla and dried fruit.

Bottled at its natural cask strength of 49.4%. The ex-Bourbon gives vanilla, the Oloroso dried fruit, while peat phenols carry the smoke, fitting for a stage named Peating. A farm malt from the Genesis series.
