Description
This Feis Ile 2019 release was Kilchoman's bottling for the Islay festival, an 11 year old vatting of 2007 and 2008 spirit in ex-Bourbon and Oloroso. An outturn of 939 bottles. Kilchoman is the only farm distillery on Islay, founded by Anthony Wills in 2005.
At Rockside Farm the whole process runs from barley to bottle on one site. Matured in ex-Bourbon and Oloroso casks, the two woods give vanilla and dried fruit.
Bottled at its natural cask strength of 54.4%. The ex-Bourbon gives vanilla, the Oloroso dried fruit, while peat phenols carry the smoke. The recorded notes run to chocolate, cooked fruit and a cooked malt note. A festival vatting.
