Kilchoman Cognac Cask Matured

This Cognac Cask Matured Edition 2023 is a 7 year old from 2016, matured in Cognac casks. An outturn of 15,100 bottles. Kilchoman opened in 2005 as the first new Islay distillery in over a century, and is the island's only farm distillery.

Kilchoman handles malting through bottling on its own Islay farm. Matured in Cognac casks, the French brandy wood adds a grape-led sweetness to the peated spirit.

Bottled at 50%. The Cognac gives a grape sweetness and dried apricot while peat phenols carry the smoke. The recorded notes run to fresh fruit, a medicinal edge, smoke, citrus, cooked fruit and vanilla. A Cognac-matured farm malt.
