La Maison du Whisky bottled this 6 year old 2018 Kilchoman for its Collection Foundations, from ex-Bourbon cask 229. An outturn of 301 bottles for France. Founded by Anthony Wills in 2005 at Rockside Farm, Kilchoman is the only farm distillery on Islay.
Kilchoman malts its barley on site and bottles on the farm, a barley to bottle approach rare in Scotch. Matured in a single ex-Bourbon cask over six years, the wood frames the young peated spirit.
Bottled at its natural cask strength of 57.1%. The cask gives vanilla and citrus, and peat phenols carry the smoke through. A young bourbon single cask from a French specialist.
