Description
La Maison du Whisky bottled this 5 year old 2009 Kilchoman from Oloroso cask 396. An outturn of 256 bottles. Kilchoman, founded by Anthony Wills in 2005, is the only farm distillery on Islay.
Malting, distilling and bottling all happen on the farm, the barley to bottle way. Matured in a single Oloroso cask, the sherry wood pulls the young peated spirit towards dark fruit.
Bottled at its natural cask strength of 56%. The sherry gives dried fruit, melanoidins reading as fig and raisin, and peat phenols the smoke. A young sherried single cask from a French specialist.
