Description

La Maison du Whisky bottled this Kilchoman from 2010 as part of The Trilogy, an Oloroso single cask, number 199. An outturn of 642 bottles for France. Founded by Anthony Wills in 2005 at Rockside Farm, Kilchoman is the only farm distillery on Islay.

At Rockside Farm the whole process runs from barley to bottle on one site. Matured in a single Oloroso cask, the sherry wood pulls the young peated spirit towards dark fruit.

Bottled at its natural cask strength of 60.6%. Dried fruit comes from the Oloroso, its melanoidins reading as fig and raisin, with peat phenols carrying the smoke. The recorded note is cooked fruit. A sherried single cask from a French specialist.
