Description

This was the 8th Edition for The Kilchoman Club, a vatting of 2006 and 2007 spirit in Oloroso and ex-Bourbon. An outturn of 1,242 bottles. Set up by Anthony Wills in 2005, Kilchoman remains Islay's only farm distillery.

Every stage from malting to bottling happens at Rockside Farm. Matured in Oloroso and ex-Bourbon casks, the two woods give dried fruit and vanilla.

Bottled at its natural cask strength of 54.3%. The Oloroso gives dried fruit, the ex-Bourbon vanilla, while peat phenols carry the smoke. The recorded notes run to chocolate, citrus, dried hay and a toasted note. An early club vatting.
